    • 250g candy potatoes, peeled and diced into 1cm cubes
    • Spray olive oil
    • 1 massive courgette, diced
    • 2 x 22cm pre-cooked cauliflower crusts (attempt our recipe right here)
    • 80g basil pesto
    • 80g semi-dried tomatoes, drained and chopped
    • 125g ball reduced-fat mozzarella, drained, thinly sliced and blotted properly with kitchen roll
    • 50g child rocket, to serve


  1. Warmth the oven to 200°C/fan 180°C/gasoline 6 and line a big baking tray with non-stick baking paper. Put the candy potatoes on the ready tray and spray with olive oil. Roast for 20 min or till golden, including the courgette for the final 10 min.
  2. Unfold the cauliflower crusts with a good layer of basil pesto. High with the roasted veg, semi-dried tomatoes and mozzarella.
  3. Switch the pizzas to the oven and cook dinner for 10 min or till golden.
  4. Scatter child rocket over every pizza, then reduce into slices and serve.
