• 250g child carrots
    • 300g child new potatoes, halved (quartered if massive)
    • 2 medium crimson onions, lower into wedges
    • Spray olive oil
    • 300g brussels sprouts, trimmed and halved
    • 1tbsp olive oil
    • four x 125g lean pork loin steaks
    • 1 leek, halved and thinly sliced
    • 300g combined mushrooms, sliced
    • 1 very low salt gluten-free rooster inventory dice dissolved in 200ml boiling water
    • 60g Lightest Philadelphia
    • 2tbsp chopped recent chives
    • 1tbsp chopped recent flatleaf parsley


  1. Warmth the oven to 200ºC/fan 180°C/fuel 6. Line a big baking tray with non-stick paper. Put the carrots, potatoes and onions on the ready tray and spray with olive oil. Cook dinner the veg within the oven for 15 min, then add the sprouts to the tray and spray with a bit of extra oil. Bake for an additional 20 min or till the veg are golden and tender.
  2. In the meantime, warmth 1tsp of the olive oil in a big non-stick frying pan over a medium-high warmth. Add the pork steaks and cook dinner for four min on either side or till carried out to your liking. Switch to a plate, cowl loosely with foil and put aside.
  3. Add the remaining oil to the pan and return it to a medium warmth. Add the leek and sauté for five min or till softened. Enhance the warmth to excessive, add the mushrooms and cook dinner, stirring usually, for three–four min till golden. Add the inventory and simmer till decreased by half. Stir by means of the delicate cheese and half the herbs. Season with black pepper.
  4. Return the pork to the pan and simmer for 1–2 min till it’s warmed by means of and the sauce thickens barely. Serve the meat with the sauce and roasted greens, sprinkled with the remaining herbs.
